We’re excited to be joining Hop Culture for another Juicy Brews fest in March—this one in Pittsburgh hosted by our friends at Cinderlands Beer Co. JUICY BREWS LATE NIGHT will be held at Cinderlands’ new product facility in the Strip District of Pittsburgh on March 2. The fest will have unlimited pours from 20+ breweries, as well as music and a killer menu of late night-inspired bites from Cinderlands’ kitchen. Introducing THE FLOOR IS GUAVA. Forget that it’s nearly December and snow is falling from the sky. We just canned up a new tropical milkshake IPA brewed with Azacca & El Dorado hops, milk sugar, and pink guava. If you’re a fan of our peach milkshake IPA, Whatever Feels Right, then this is your beer. TFIG combines a creamy, pillowy mouthfeel from lactose & oats + a slight tartness from the guava + grapefruit, stone fruit, and pineapple notes from the hops.

Release of Smallish – Petite Barrel Fermented Saison

Next Monday, 11/19, we will be releasing bottles of Smallish, a petite saison fermented and aged entirely in oak barrels with a blend of our house saison yeast strain, Brettanomyces and Lactobacillus. Since starting Hacienda, we’ve been eager to produce low ABV mixed fermentation beers—and Smallish is the first of many to come. Smallish was brewed back in April, spent over 4 months in used white wine barrels, and finally conditioned for the last 3 months in bottles. Sitting at just 4% ABV, Smallish is funky, tart, and drinkable—a perfect beer to pair with a glutinous Thanksgiving meal. The funk and acidity of Smallish are rounded out by hints of candied lemon, cherry, rye, and oak. 750 mL bottles of Smallish will be sold at our taproom upon opening at 1pm on Monday, 11/19. We will also be selling bottles of Smallish for on-site consumption. If you are heading up to Door County for Thanksgiving, be sure to swing by the taproom and grab a couple bottles to share with family and friends.

First Koelschip Fill & Spontaneous Fermentation

This week, for the first time, we transferred our first batch of wort into our new koelschip. We opened up the windows of our koelschip cabin to let the cool air flow through the small building. The wort naturally cooled overnight and native microflora settled into the beer. The next morning, we transferred the cooled wort into barrels for extended aging. Five days later, there was clear evidence of spontaneous fermentation, as the barrels were overflowing with an active fermentation. If everything goes as planned, the beer in these barrels will be ready in 1-2 years. Be patient with us.

Release of L'automne – Our Fall Seasonal Saison

This Friday, to celebrate peak fall color here in Door County, we will be releasing bottles of our fall seasonal saison, L’automne. The 2018 version of L’automne was brewed with buckwheat, earl grey tea & orange peel, fermented with our house saison yeast strain, and refermented in the bottle with a blend of Brettanomyces. The result is a rustic, earthy & floral beer with notes of orange, hay, & black tea and a complex malt profile.

The Mix Tape: A Beer Dinner at Parador with Hacienda Beer Co.

We are teaming up with our friends at Parador for a special ticketed multi-course beer dinner on Thursday, Sept. 20 – The Mix Tape. Release of DDH Everything Eventually with Vic Secret Cans

We just finished canning a new double dry hopped version of Everything Eventually — this one featuring the Australian hop Vic Secret. Just like for Everything Eventually, we first dry hopped the beer with Citra — then we added an additional dry hop with Vic Secret. The result is a beer with a ton of passionfruit, grapefruit, pineapple & pine aroma/flavor. Cans are now available for to-go purchase in the taproom. Release of L'été – Our First Bottled Mixed Fermentation Saison

The time has come for the release of this year’s L’été, our summer seasonal saison. For 2018 L’été, we selected a small number of our favorite barrels containing aged mixed fermentation saison. The result is a dry beer with a complex Brett expression and subtle acidity, with notes of ripe pineapple, lemon, hay, funk, and oak. The beer in this year’s blend was fermented and aged entirely in used red or white wine barrels with a mixed culture of Brettanomyces and souring bacteria. AND this marks our first time bottling a mixed fermentation beer. After bottle conditioning with additional Brett for nearly 4 months, we absolutely love how this beer turned out. It’s everything we love about mixed fermentation saison.
